25 May Zucchini stuffed with meat and grated cheese
To enjoy zucchini and all its benefits, today we bring you the recipe of zucchini stuffed with thyme minced meat and vegetables gratinated in the oven with the combination of grated cheese ‘5 cheeses’; nutritious dish rich in iron.
Ingredients for two people:
- 1 large courgette or two if medium.
- 250 g of minced meat.
- 1 chive
- 2 tomato
- 1 spoonful of caper
- Extra virgin olive oil
- 500ml of milk
- 35gr of flour
- 35gr of butter
- Grated cheese 5 cheeses.
Preparation of the recipe:
Step 1: empty the zucchini and cook them:
Cut the courgettes in half, and empty them carefully.
Cook for 5 minutes and drain on absorbent paper.
Chop the inside of the zucchini and save it.
Step 2: add the spring onion, tomatoes and zucchini inside:
Chop the onion finely and put them to poach in a pan with a little oil. Peel the tomatoes, cut them in half, remove the seeds and put them in a bowl. Reserve it
Cut the tomatoes into pieces and add them to the pan.
Add also the inside of the zucchini.
Reduce everything for 10 minutes and season it.
Step 3: Add the meat and thyme:
Add the meat and thyme. Salt and add chopped parsley.
Reduce the meat.
Step 4: prepare the bechamel:
To prepare the bechamel. Put the butter in a pan until it melts, and then add the flour. Let it cook and stir constantly until it has a slightly golden tone. At this time we begin to add the previously heated milk little by little, without stopping to stir until it is all integrated and without lumps, with a texture that is not very thick. Pour salt, pepper and nutmeg.
Once you add the béchamel, add the grated cheese on top.
Step 5: fill and gratin:
Place the zucchini on the oven-proof container, refill and gratin at 200ºC for 5 minutes.
Add the chopped capers to the bowl of the tomato seeds, pour a good squirt of olive oil, a pinch of salt, and mix well.
