300g fresh cheese
350g cottage cheese
2 teaspoons vanilla extract
25 g brown sugar
3 large eggs, milkshakes
3 teaspoons of lavender honey, or other honey
150g of oatmeal cookies
1 teaspoon ground cinnamon

Preheat oven to 150 ° C. Drain all the liquid from the fresh cheese and leave it in a colander.
To make the base, put the cookies in a plastic bag and crush them with a rolling pin until they have small pieces of the same size. Melt the butter in a saucepan, add the cinnamon, stir and cook for a few seconds, then pour the crumbled crumbs and stir until they have absorbed all the butter. Put in the base of the mold and redistribute evenly. Press with the back of a spoon. Put the mold on a tray and bake 20 minutes until crispy.
Put the curd cheese and drained fresh cheese in a large bowl. Add the vanilla extract, sugar and a third of the eggs and beat until smooth. Incorporate the remaining beaten eggs. Dip a spoon in hot water, add the honey to the cake, one tablespoon at a time and dip the spoon in hot water between each tablespoon. Beat the honey with the cheese and check the sweetness. Pour the mixture over the base, put back in the oven and cook 30 minutes until this solid. Turn off the oven and let the cheese cake cool, cover with foil and cool in the refrigerator for at least 2 hours or overnight. Serve the cheese cake with strawberry jam.
