Macaroni with vegetables and vegan cheese

Today we bring you a recipe for pasta with vegan cheese. A fabulous dish of multi-colored Macaroni with vegan cheese, rich in vitamins and with all the flavor of cheese. Ideal for these days of confinement, children love it.

INGREDIENTS

½ kg of leftover macaroni
1 medium onion
½ red pepper
1 small green pepper
2 medium zucchini
Vegan cheese
Oregano or basil leaves
Virgin olive oil
Salt and pepper

ELABORATION

While the macaroni is cooking, cut the onion into very thin strips and the rest of the vegetables into small cubes.

Put a frying pan with two tablespoons of olive oil on the fire and fry the onion until it is transparent. Then add the peppers and zucchini. Leave on the fire until cooked. Grind with salt and pepper.

Once the macaroni is cooked, add them to the pan and let everything cook together for a few moments.

Finally, add the oregano or basil, the remaining two tablespoons of olive oil and the cheese.
