Tartiflette: Potatoes with cheese and bacon in the French style

Tartiflette is a recipe for French cuisine. It is characterized as a strong and tasty recipe. Originally the Reblochon cheese was used in the original production, but we will use the cheese that best suits our palate. We recommend that you use a cheese that is creamy.

Ingredients:

  • 500g of potatoes
  • 2 large onions
  • 250g of cheese
  • 100ml of cream
  • 200gr of bacon
  • Olive oil
  • Salt and pepper
  • A splash of white wine

Preparation:

To start, we wash the potatoes and put them to cook in a casserole, without removing the skin. When they have passed approximately 30 min, check that they are cooked by clicking with a sharp object on any of them. If the object leaves without difficulty, they are ready. Drain them and let them warm up.

Meanwhile, peel and chop the onions in a not very thin way and fry them with a little oil in the pan. When it starts to brown, add the bacon to the pan. Continue sautéing until the bacon has color. We add a little white wine and let it reduce for 2 min. Then we remove and reserve.

For the preparation of the tartiflette, cut the potatoes into slices 1cm thick. Place a first layer of potatoes, to which we will add salt and pepper. On top we place half of the onion and bacon. We put another layer of potatoes and again the other half of the onion and bacon.

Then pour the cream and finish by placing a good layer of cheese.

With the oven preheated to 200ºC we introduce the covered source with aluminum foil. We bake for 30 min. Remove the paper and let the cheese gratin for another 10 min.
