Cheese burritos and spicy beans with tomato sauce.

These burritos are lighter than those that can be found in Mexican restaurants. The beans and tomato sauce can be prepared in advance and mixed at the last moment to make the recipe easier.

200g fresh cheese
1 large avocado
1 lime
4 large flour tortillas wheat
1 iceberg lettuce
Freshly ground black pepper
sour cream

Spicy beans
400g canned beans
2 tablespoons olive oil
½ bunch of chives
2 cloves garlic
1 teaspoon chili powder soft
1 teaspoon ground cumin
1 Natural tomato
1 jar tomato
2 tablespoons fresh cilantro
lemon juice (fresh squeezed)

Fresh tomato sauce
350g cherry tomatoes
2 spring onions, clean and thinly sliced
1 green pepper
1 lime
2 tablespoons fresh cilantro

First let’s make spicy beans. Put the oil in a saucepan over medium heat, fry the onions a couple of minutes, incorporating garlic, chili powder and cumin and stir. Add the tomatoes, breaking them with a spatula or wooden spoon. Pour the beans, cover and cook 5-6 minutes, until the liquid has evaporated all. Remove the pan from the heat and crush the beans with a fork. Add the cilantro and season with lemon juice and salt to taste. Reserve.

Then prepared tomato sauce. Chop the cherry tomatoes and place in bowl with chives, green pepper and lime juice. Salt and mix with cilantro.

Prepare the remaining ingredients. Crumble the cheese. Peel the avocado and cut the flesh into small cubes, mix with a little lemon or lime juice, season and mix with cilantro.
Heat a skillet over low heat and put one of the tortillas. Allowed to warm for one minute, turns and heated on the other side. Place the tortilla on a plate and add a quarter of the beans in the center. Above the beans put a thin layer of cheese into pieces, and another layer of lettuce in juliana. Add the avocado and tomato sauce. Fold both sides of the tortilla toward the middle, then roll the burrito. Cut diagonally with a sharp knife and place on a plate. Serve with a good portion of guacamole and sour cream, if desired, and more tomato sauce.
