Caesar salad with mozzarella

There are days or even weeks when we don’t have time for anything, that’s why today’s recipe will help us a little to cope with those moments when we don’t have much time but we don’t want to stop eating healthy and tasty. In addition, this recipe will allow us to have all the ingredients made in advance, so it will be to arrive and sit at the table (or almost). We are going to learn how to prepare a delicious Caesar salad.

Caesar salad ingredients

1 whole chicken breast
croutons or baked bread cubes (better than fried)
Mozzarella
1 small romaine lettuce or 6 buds
Cherry tomatoes
80/100 gr. salted anchovies
50 gr. Parmesan cheese
1/2 lemon
mustard seed
Perrins sauce
1/2 clove of garlic
virgin olive oil, sherry vinegar, salt and black pepper

Elaboration

First, we will prepare the chicken so that it can cool. In a hot frying pan and over low heat we will mark the whole and seasoned breast. Once it is golden, we will turn around. When the second side is browned, and without moving it, we will cover the pan for approximately 8 minutes (depending on size).

At the end of that time, we will make sure that the breast is made from the inside, we will remove from the fire and let cool. Once the breast is cold, we will cut it into cubes and reserve it.

Now we go with the Caesar sauce, in the glass of the mixer we will put the anchovies and the half clove of garlic. Then we will add the Parmesan cheese, the mustard in grain, the vinegar of Jerez and a splash of perrins sauce. With the mixer, we will begin to beat the mixture.

And depending on how we want the sauce, if it is thicker or lighter, we will be adding virgin olive oil until it mounts and we get the desired thickness (I do not recommend leaving it very thick). We must have something like that.

We will only have to wash and cut the lettuce, add the cherry tomatoes, the diced chicken, the mozzarella and the Caesar sauce and stir the whole very well to get everything well seasoned.
