FORGIVE THE REDUNDANCY

The Burgos cheese is a typical cheese from this province of Castilla y León, and takes its name from the city where historically was held a weekly market that brought together the peasants in the neighborhood to sell their cheeses originally made with sheep’s milk. At present, it is more common to find them made with cow’s milk. This fresh cheese Flor de Burgos is presented in a pot with lid, a point in its favor since it facilitates its conservation if it is not consumed at once. It has an irregular appearance, with some holes. It gives off a dominant aroma to fresh milk with fruity nuances and nuts. The texture is gelatinous but consistent and leaves the grain of the curd. Its consumption offers a great variety of possibilities: in cold dishes, both sweet and salty; in desserts; cake shop; toasts; salads and even – for the most daring – grilled, golden round and back with a drop of oil and seasoned with vinegar, salt and pepper.

The guide of Los Superquesos

Los Superquesos is the first cheese guide published in Spain. Its objective is to advise the consumer on the huge variety of offerings in the main supermarkets in the country and give them the keys to enjoy some of the best cheeses in the world. It is also an essential aid in the fun adventure of discovering new cheeses.
