Salty muffins with zucchini and cheese

The salted muffins with zucchini and cheese are ideal for a multitude of situations: breakfast, brunch, snack or for a festive event. You can make them from the vegetable that you like the most (we have opted for zucchini) but the taste is, without a doubt, spectacular. Today we teach you how to prepare them. Too easy!

Ingredients:

1-2 zucchinis
200 gr. of flour
1 packet of baking powder
3 eggs
100 gr. of grated cheese
50 ml. of olive oil
150 ml. milk
Salt and pepper to taste

Preparation:

We start by washing the zucchini and grate them well. We use a little kitchen paper to remove excess water.

The main mixture is going to be made by churning the eggs and then mixing it with milk and oil. Then we pepper to our liking. If you want to make the mixture a bit healthier, you can do it with 1 yolk and two whites. (the whites is the part of the egg that contains the most protein)

The other part of the mixture will be made by mixing the flour with the salt and our favorite grated cheese. When we have it ready, we add it to the other half of the mixture. We beat it well until it is of a homogeneous texture. Finally, we add the grated zucchini. We finish the mixture.

With the oven preheated to about 180ºC, we are preparing the muffin molds where we are going to prepare the recipe. With a little oil, grease the mold and introduce about 2/3 of the mixture. They will be baked approximately 25 minutes. When they have taken volume and are golden, it will be time to remove them. Before unmolding, let them temper for about 10 min.
