15 Mar Salad with zucchini and mozzarella pearls
For those of you who do not have time to cook and want to prepare something healthy and fast, we present this idea of salad with zucchini and mozzarella pearls to which you can include these ingredients that we show you that we believe they are a good match between them. All wrapped in a honey and modena vinaigrette that we will teach you how to prepare.
Ingredients (for 2 people):
- 1 large zucchini
- 1 pack of mozzarella pearls
- cherry tomatoes
- 1 handle
- 4 small radishes
- 1 tin of red pepper
For the vinaigrette
- Olive oil
- Balsamic vinegar
- Black pepper
To prepare the vinaigrette, put in a bowl a tablespoon of modena vinegar, a pinch of salt and pepper to taste. We remove and add a spoonful of honey. When it is well dissolved add about three tablespoons of oil and stir until emulsified.
With the rest of the recipe it is very simple. Peel and wash the zucchini and pass them through a mandolin to make our strips. We add the cherry tomatoes and the radish later, also washed and if you prefer, cut in half.
With the mango, once peeled, you can cut it to taste, either in segments or small dice, as you prefer. The red pepper, once extracted from the can, it is removed the liquid that comes in the content and you add it to the salad in thin strips.
Finally and to give the final touch to the salad, add the pearls of mozzarella and decorate with a little fresh basil. The final finish will be given by our dressing of honey and modena vinaigrette that will combine all the elements of our salad.
