Quiche with leeks, bacon and blue cheese

Ingredients (for 4 people)

  • 3 leeks
  • 150 gr of bacon in taquitos.
  • 1 sheet of fresh broken dough.
  • 250ml of cream for cooking.
  • 3 medium eggs
  • 100gr of crumbled blue cheese
  • 30gr of grated cheese
  • Olive oil
  • Salt and pepper

Elaboration:

We start by cleaning and cutting the leeks into very thin slices. A preferable being, cuts only in the white area of ​​this. We do the same with the bacon. In a frying pan with hot oil we sauté both ingredients separately. The objective is that the leek is something cooked and the bacon has that golden touch. We reserve

Now let’s prepare the base of our quiche. So we need a mold that we will previously greased with butter. On this we will place the sheet of broken dough, which likes less small marks with the fork along it.

To prepare the filling, we begin to beat the eggs in a bowl. Once beaten, add them to the salt, the cream and the blue cheese crumbled. Once the mixture is unified, add the leeks and the bacon. Reserve a part of both.

With the oven preheated to 180ºC, pour the mixture over the mold with the broken dough. Add the rest of the bacon and leek on top and if desired, add grated cheese sprinkled on top. Bake about 20 min. Check before removing it from the oven that the dough is curdled. If you want the cheese to be au gratin, place it on the grill for a few minutes.
