30 Nov Carrot Cupcakes with Mascarpone
We bring you a recipe for carrot cupcakes with cream cheese and that the kids will like a lot! And you too, do not you believe it? Let’s go with the recipe!
• 250g of flour
• 50g of brown sugar
• 50 g of white sugar
• 2 eggs
• 75ml of milk
• 1 envelope of yeast
• 2 tablespoons ground cinnamon
• 1 tablespoon ground ginger
• ¾ of tablespoon of salt
• 100g of margarine or oil
• 100g grated carrot
• 150g of mascarpone cheese
• 4 tablespoons of sugar
• 1 tablespoon of vanilla essence
We preheat the oven to 200 degrees. Mix the cheese with sugar and vanilla in a bowl. Then we put it in the fridge for later.
In another bowl, beat the eggs with brown sugar and white and add margarine or oil (depends on what we have decided to use). We mix everything well.
The next step is to mix the sifted flour with the yeast, cinnamon, ginger and milk. To finish we add the grated carrot. We mix everything.
We take the molds for the biscuits and we anoint them with a little oil. We are filling the bottom with two tablespoons of dough, in the middle we add a spoonful of cheese and we have just filled the molds with dough.
Finally sprinkle with a little sugar and put them in the oven at 200 degrees for about 20 minutes.
Once finished, we take them out and when they cool. Add a little more cheese on top and they are ready to eat.
Tip: We can top our muffins with orange peel skin grated to add a touch of color.
Note: Do not eat them all at once because the next day they are even better.
