22 Feb Carrot cream with quark cheese
We bring you a very simple and light recipe, which you can serve it both cold and hot, although at this time and with these temperatures, we recommend the latter. Carrot cream with quark cheese is a very balanced recipe for those who like to take care of our diet.
- 600 g of carrots
- 200 g of quark cheese
- 1 chive
- 1 leek
- ½ liter of vegetable broth
- 1 tablespoon of extra virgin olive oil
- 1 pinch of salt
In a saucepan, add a little oil and sauté the onion and the leek. After a few minutes we add the peeled and cut carrots to the stir-fry. We let cook about five more minutes. Then add the vegetable stock and let it cook for about 20-30 min. We can add salt if necessary.
Once this time has passed, grind with a blender and add the quark cheese. The carrot cream has to be soft and the mixture homogeneous. We can serve it both cold and hot, to taste.
