100 grams of raisins
30 grams of chives
First wash the aubergines and cut the end that joins the stem. Next, using a mandolin or peeled vegetable, cut the eggplant lengthwise into thin slices. So that they lose the bitterness, we submerge them in salt water. Meanwhile, we prepare the cream cheese mixture, to which we will add the almonds (if they are too large we can cut them in half) and the raisins.
We take the eggplant slices out of the water with salt, dry them lightly and turn them into a griddle with a little oil. We can finish decorating our roll with a bit of chopped chives, or adding a raisin or almond on top.
